Episode 5 – Chef Alex Olivier cooks “Legend of the Lamb”

This week, on Plett it’s a foodie thing, Chef Alex Olivier from Emily Moon River Lodge cooks “Legend of the Lamb” – grilled air-dried lamb and cauliflower fritters with fennel and cabbage salad, on Megamaster Patio Gas Braai, in the gorgeous surrounds of the riverside lodge and Bitou River. There’s culinary magic in the air!

TOOLS: Gas braai/grill.

INGREDIENTS:

GRILLED LAMB RIBS 1kg air-dried lamb ribs, 1 orange, zest only, 1 bunch of celery, 2 onions, 2 carrots, 2 apples, 1l white wine (let’s hope you have some in the wine rack ;)), 10g of thyme
BASTING MARINADE 2 lemons juiced, 1 clove of garlic crushed or diced, 50ml olive oil
CITRUS, CHARGRILLED CAULIFLOWER FITTERS 1 small white caulilower, 3 eggs, 2g Italian parsley, 1g ground allspice, 100g white bread flour, 30g butter, 50ml olive oil, 1 tablespoon baking powder
FENNEL AND CABBAGE SALAD 1 fennel bulb, 100ml white wine vinegar, 1 small red cabbage, 1 small white cabbage, 3g mustard seeds, 10g raisins, 4 tablespoons brown sugar, 2g fresh coriander, salt & pepper to taste, hot water
